This is the plate that sits before me as I indulge in a spot of lunch time blogging. I was staring into the fridge this morning, looking for something to pack for lunch, thinking what a long and challenging week it's been... I found myself staring at a packet of... could it really be some prosciutto? Fast forward to a lunch that would surely redeem any week. The olives are from the pantry, some salty crumbling parmesan, a crisp apple and some good chewy bread and butter. I must do lunch like this more often.
Almost too cute to eat. Leftover stuffed red pepper from Sunday's stuffed veg dinner. The filling is orzo, pinenuts, parsley, garlic, shallots, preserved lemons.
If you have a grill on hand, cheese and bacon toasties make a wonderful lunch treat. Toast the bread on one side, flip and spread the uncooked side with chutney, sprinkle lightly with a grated hard cheese, and add a few pieces of diced bacon (or not). Grill until the cheese is bubbling and the bacon is cooked.
You don't want so much cheese and topping that you ruin the crunchy toast experience. Better to go for a great piece of toast subtly adorned with a lovely topping. My thoughts are drifting to the royal wedding and some of the appalling hats people wore that day. With hats, like toasties, one should exercise restraint. In my not so humble opinion.
