We used to order Really Good Tomato Salad at Tapastree on Robson Street in Vancouver. They only made it when really good tomatoes were available, and it really was really good. It's easy to make, a treat to eat, and fleeting, so I say gorge while you can.
This is the first ripe Green Sausage tomato. It's very green, a bit stripey, and its innards resemble the Roma, with dense flesh and not so many seeds. Tangy, a bit lemony, but maybe if I was more patient and let them ripen a bit more, they would sweeten up.
Currently ripe: Green Sausage, Cherokee Purple (not exactly purple, but a purply red), Tommy Toe, Roma, Tigrella and Gardener's Delight (both self-seeded from last year). All the seeds came in the mail from the wonderful Kings Seeds.
How To:
Cut tomatoes into bite-sized chunks. The more colours the better. Sprinkle with salt.
Drizzle with olive oil.
Drip over some balsamic vinegar.
Stir in some fresh basil.
And don't forget to give it a beautiful dish to rest in.
You can eat this really good salad with anything, but on a Friday night you've really got to have it with a rack of lamb.
Can't wait till these babies are ripe. Oaxacan Jewels. More like Oaxacan rocks -- big enough to make a really good salad all on their own.

Totally jealous! Other than a handful of tiny cherry tomatoes, we managed to pick our very first (and probably last) mid sized tomato yesterday. It will be savoured!! Clearly I need to plant many more plants next year.

I love the title of this salad - and just look at those gorgeous tomatoes! What stunning colours. Have never tried green tomatoes, the name "green sausage" is a bit hilarious though, isn't it!
